Letter to a Friend from Kris
I received an
email recently from a friend lamenting all the illness and death in her
circle of friends and family. I sent this letter back to her. It has a
message for everyone in this day of manufactured food.
Thoughts on nutrition and health
This is a long letter meant for you from a retired dietitian who
is tired of the mis-information I see in the press and at the doctor's
office. The Internet is a powerful tool for letting you know there is another
way to look at things. I hope you will read -- no -- study what I have to say.

in magazines and books - "It is generally accepted that a diet high in saturated
fat and cholesterol increases the risk for heart disease." WRONG! There is a
wealth of info that challenges this idea, and addresses the issue of

and biochemical reasons why excessive carbohydrates and
essential fatty acid imbalance, not saturated fat and
cholesterol, are the main reasons why we suffer an
epidemic of these degenerative diseases. A good book to
study and give to your doctor when he/she tries to push
pills instead of nutritional therapy for your "high
cholesterol". A word of caution - Some of
the books recommended in the last chapter, "What Do
You Do Now?", have a confusing anti-saturated fat
message, so study Nourishing
Traditions first, as a source of general advice on
eating, and the other books for guidance on restricting
carbohydrates. Although the book mentions a 40-30-30
carb, protein, fat meal plan, actually it works better to
limit carbs, get adequate protein, and get plenty of
calories from good
fats, which can work out to a 20-20-60 distribution
of calories, keeping in mind that good fats come from
pastured animals. I have communicated with the authors by
email, and they agree that this is true. They report that
they are supporters of the Weston A Price Foundation.

This book should be read by every
parent who is concerned about their child's health, but be aware of
some minor shortcomings. She highlights the importance of getting adequate
omega-3 fatty acids, suggesting flax oil and fish oil capsules. Flax
oil is highly perishable, so freshly ground flax seed is recommended.
Good quality fresh liquid
fish oil is a cheaper and more practical way to omega-3 essential
